Vinification & Aging

Meticulous work

Each parcel is vinified separately in thermo-regulated cement vats. With time and experience, we know the identity and potential of each plot. Our vinification choices become obvious.

Our terroir gives us grapes rich in color and tannins. The optimal quality and maturity desired leads us work on a gentle vinification, by gravity. There is no need to rush our grapes. We accompany the work of nature, looking for a balance between fruit and tannins.

The wines are then aged for 12 to 14 months in French oak barrels. Once again, we adjust our choices for aging. For example, Château GUIBEAU Grande Réserve and Château GUIBEAU Noé are vinified in 500 liter French oak barrels.

We always seek elegance in power. Maturing our wines in barrels is a meticulous job that allows beautiful ripening of the tannins and the wines. The oak refines the very essence of the wine.
